What is a food safety temperature chart ?

A food safety temperature chart is a chart that is used to indicate when the temperature of cooked food is considered safe enough to eat.

How Does A Food Safety Temperature Chart Work?

To prevent the growth of harmful bacteria and foodborne illnesses in the consumers, safe steps in food handling, cooking and food storage are essential. Food safety temperature chart helps you in all these three steps of food handling, cooking and storage. A food safety temperature chart is essentially a guide to keep the food safe for consumers and prevent growth of harmful bacteria in the food. It is difficult to see, smell or taste the harmful bacteria that causes foodborne illnesses or food poisoning. Therefore, the only way to keep the food safe or maintain food safety is to maintain the temperature of the food according to the food safety temperature chart.
There are three basic factors for safety temperature. These are
- To maintain appropriate temperature
- To maintain consistent temperature throughout
- Temperature is not the only factor in food safety- time and location plays important role

The Concept of Danger Zone
The concept of danger zone for foods evolve from the potential of growth of harmful bacteria. Danger zone thus represents the temperature range where growth of harmful bacteria is fastest on the food. The recommended danger zone for food is the temperature danger zone of 41 and 135 degrees Fahrenheit. However, the most hospitable zone for growth of harmful bacteria is considered to be between the temperature range of 70 and 125 degrees Fahrenheit. Within this danger zone, the food may appear, smell and taste normal, but the growth of harmful bacteria may result in foodborne illnesses or food poisoning in the consumer. The longer time food is kept in this temperature danger
zone, the greater risk of growing harmful bacteria on the food.

The 2 hour/4 hour Guide
The concept of danger zone explains the temperature range for safe food or food safety. However, there is time factor also involved with this danger zone. Normally, hazardous foods are safe if kept at 41 degrees Fahrenheit or colder or 135 degrees Fahrenheit or hotter, but is remains safe if food is kept for less than 4 hours. The reason for this time frame is that food poisoning bacteria takes more than four hours to grow to dangerous levels.
It is also advisable that perishable foods should be refrigerated within two hours to prevent growth of harmful bacteria in food storage.
The most important thing is to keep checking the internal temperatures of the food with the help of a good food thermometer to avoid any confusion.

Digital Food Safety Temperature Chart or On Paper?

Be it household or a restaurant, the concept of digital food safety is quickly taking over from traditional and manual practices. Automation of the tasks and compliance reliability is performed with the help of a software which were traditionally completed on pen and paper.
In food service industry, food safety is of utmost importance. But it's worth if it is practiced within a significant amount of time and resources. The digital food safety chart helps in-
- Reducing helping hands needed to complete safety/compliance tasks
- Reducing time required to complete the task
- Expedite and simplify the process of data gathering
- Improved inspection performance

There are many challenges associated with the use of traditional on paper food safety chart. These are-
- Lack of transparency
- No real time digital reporting
- No real time access to progress of daily operational tasks
- In case of restaurant, poor customer experience

The Proper Cooking and Storing Temperatures For Meats

Animal products or meats like veal lamb come under the most vulnerable category as far as contamination is concerned. Harmful bacteria may grow really fast causing foodborne illnesses or food poisoning among the consumers of meat poultry products. Thus, it is really important to cook meat at appropriate cooking temperature and store it strictly as per recommended.

Cooking
As per USDA food safety temperature chart, it is not recommended to eat meat with a minimum internal temperature below 140 degrees Fahrenheit. Similarly, there are recommended cooking temperatures for safe cooking of other meat dishes as well. Let's take a look at this chart for better understanding of internal temperatures and cooking temperatures.

Poultry- Recommended temperature for food safety of poultry dishes is 165 degrees Fahrenheit, while for cooking eggs and egg dishes this temperature is 160 degrees Fahrenheit.

Ground Meat and Meat Mixtures- For such dishes the recommended temperature is 165 degrees Fahrenheit. For Pork Veal, Beef and Lamb the recommended temperature is 160 degrees Fahrenheit.

Fresh Pork and Beef- Steaks, Roasts and Chops
Recommended temperatures for
- Medium Rare is 145 degrees Fahrenheit
- Medium is 160 degrees Fahrenheit
- Well Done is 170 degrees Fahrenheit, with 3 minutes rest time

Storage- Here are few steps to store meat with food safety standards to avoid growing harmful bacteria on food.
- Make sure meat is kept below 40 degrees Fahrenheit when refrigerated
- Avoid keeping food in room temperature for more than two hours
- Keep food out of the danger zone, temperature range between 41 and 135 degrees Fahrenheit
- Freeze your leftovers immediately if they are not to be consumed within three days
- Reheat the meat at the same recommended temperature before eating
Please make sure that all the internal temperatures are monitored through a food temperature for accuracy.

The Proper Cooking and Storing Temperatures For Fruits and Vegetables

Cooking
For fruits and vegetables, the minimum internal temperature recommended for safe food is 135 degrees Fahrenheit. This safe minimum temperature usually applies to commercially processed, ready eat foods held hot for service like cheese sticks and deep fried vegetables.
However, due to high nutritious value, roasted vegetables are high on demand these days. Roasted vegetables are low in fat, high in fiber and rich in vitamins and minerals. The recommended temperature ranges for vegetables lie between 350 to 500 degrees Fahrenheit.

Storage
It is recommended that for food safety different fruits and vegetables should be stored in different ways. For storage of vegetables and fruits, the refrigerator should be kept at 34 degrees Fahrenheit. Vegetables are typically kept in the crisper section of the refrigerator. There are basically 4 categories for storage of vegetables and fruits. These are-
- Moist storage at 32-39 degrees Fahrenheit
- Moist storage at 40-50 degrees Fahrenheit
- Dry storage at 32-39 degrees Fahrenheit

The Proper Cooking and Storing Temperatures For Leftovers

Cooking
Cooked food can be stored in the fridge and consumed within days in ideal conditions. Reheat food to above 167 degrees Fahrenheit or, preferably, boiling. The steam should come out of the food throughout, not just from the edges. Follow the same measures when cooking with a microwave. Do not forget to stir the food halfway through cooking when using a microwave. Internal temperature must be checked with a food temperature.

Storage
Safely cooked food is as important as the way it is preserved and stored. There are rules to follow when you are storing cold food or leftovers in your refrigerator. It is very important to refrigerate leftover food within two hours. Place leftovers in shallow containers and refrigerate promptly to allow quick cooling. Once done with the cooling of the food, cover it and put the leftover in the food refrigerator. Place the temperature of the food refrigerator at 41 degrees Fahrenheit or below for best results.

Conclusion

Be it at home or in restaurant, it is vital to cook food at the right and recommended temperature. This process prevents harmful bacteria from growing on the food. Thereby, this also makes sure that the consumer is safe from foodborne diseases or food poisoning. With cooking, there are recommended temperatures for refrigeration and freezing of the food items. Weighing so much importance, it is vital to have a food temperature chart to make sure that the food is cooked and preserved at just the right temperature.
